Vienna Restaurants

In restaurants,
there seem to be two kinds of waiters.

One is only for clearing the table,
who wears ordinary clothes.
The other is what we think of as a waiter, takes orders and serves dishes,
who wears an uniform.
--I came to this idea by following episode:

In one restaurant,
a man wearing casual carried plates away from the next table.
i thought it's an Austrian manner to do that when we find plates left on the table. so i did same for my table.
Then that man ran up to me to say "no, don't do that!" -not in English but phrase like that.

and In the next restaurant,
when i was looking at the menu outside,
a man wearing a normal jacket came up to me and told me how tasty they are.
Clearing-table man seems to be a Calling-in man.
